Tuna Stuffed Tomatoes

We made these the other night. I'm trying to avoid canned food as much as possible, but I do enjoy tuna and it's cheap so I added this into our meal plan for the week. Someday, I'd like to make this with freshly cooked tuna.

Tuna Salad with Fresh Dill
Adapted from AllRecipes


2 (6 ounce) cans tuna
1/2 cup diced celery
1/2 cup chopped fresh dill weed
4 tablespoons chopped fresh parsley
4 tablespoons thinly sliced green onion
4 tablespoons mayonnaise
4 tablespoons plain yogurt
1 teaspoon prepared Dijon-style mustard


In a small bowl, add tuna, celery, dill, parsley, chives, mayonnaise, yogurt, and mustard; mix well.

For the tomatoes, hollow out the inside of the tomatoes (we did ours in the way you would for a pumpkin) and then stuff the tuna into the hole.

Aren't they pretty?
